You can check the status of your shop quests by visiting the art merchant, blacksmith, doctor and tailor that are nearest to Ezio's hideout in Rome. Simply collecting the required items automatically makes progress on the "quest," and once you've earned the required items you can exchange them for unlockable extras like a treasure map, weapons or a bigger quiver.
